Is this possible? I've read it was possible for the 2.6x version and the link is tantalisingly on the Wiki.

Can I do it still?

Or is it possible to download a version of 2.6 and the converter. Convert my forum and then upgrade to the latest version?

Sorry if this has been covered elsewhere, I haven't been able to find it.

Yes, it's possible to convert to the latest FUDforum version. The upgrade script may need some minor tweaking. However, if you can provide us with a backup of a forum to test with, we can fix it up for you. Alternatively, if you want to fix the script as you go you can just send it back to us to upload again.
