Hello, me again.

For some reason, the default alignment in fudforum (in eGroupware) in my installation is set to centered. Can this be changed for the entire installation? or at least for a user?

If so, where does this setting reside?

The forum's alignment is specified inside the forum.css.tmpl file which you can edit with the theme editor (or by hand). Once you edit this file you should rebuild the theme and that would push the changes live.
The particular style is ForumBackground
