FINALLY discovered the answer!!

PostgreSQL 8.1 installs, by default, have OID support turned off.
To turn it back on - find the line:

#default_with_oids = off

in the postgresql.conf file, and change it to:

default_with_oids = on

Then do "kill -HUP postmaster" to re-read your PostgreSQL configuration, THEN create your FUD database - and it installs fine and dandy!
