I just set up FUDforum on our server and note that the sample forum setup contains a "Private" category with a forum for registered users and one for moderators/admins. Where is the flag or setting that designates who can access these forums? If I set up another forum in the "Private" category the forum is public. How would I go about restricting access to it.

On a related question, is it possible to designate a forum as being private to a subset of registered users (other than moderators/admins) and how would this be done?

Yes and yes.
Click on "Admin: | Group Manager" while browsing the relevant forum.
Also see "Group Manager" in Admin Control Panel.
