FUDforum's default theme (and probably all the other ones) change BODY background color to white, but do not change default text color. In some setups like mine (I have set black background and white foreground) it leads to white-on-white text which is unreadable.
I believe the simple rule should be followed: if you change on of defaults (be it foreground or background), you should change the other one as well.
So in addition to setting background color to white, please also set default text color to black. In CSS this is
