I think it would be right to re-confirm the email address every time the user changes it.
Otherwise you could put a false address or someone else's address and fill his mailbox with notifications and so on.

Hmm, I have not considered this posibility, I'll see how to add some sort of email verification step in the even the user changes their email.

As of the next release (added in CVS) when a user changes their email addres and Email Confirmation is turned on, the user will be required to re-confirm their account via a special url sent to their new email address.
