1. How can I create a similiar 'Who is Online' box?

You can either use the FUD API's fud_fetch_online_users (http://fudforum.org/forum/index.php?t=msg&goto=20560) or you can use the templating system. My page is based on the templating system entirely so as I don't work with the FUD API I could only give you a working example for the templating system. The small code snipplet in the thread I mentioned should give you a base to build on, though.

2. How can I put polls on the frontpage in a similar way?

Putting polls there is a little more tricky.
You could probably use fud_fetch_msg, fud_fetch_poll and fud_update_msg to manually update the poll data but since I've never worked with PHP prototypes before I can't help you with that =\
Another approach would be to directly manipulate the SQL tables yourprefix_poll and yourprefix_poll_opt. Probably less troublesome but I'm not aware of any possible caching/tracking collisions.
