Is the style I had in the 1.2.8 version gone? I upgraded and it's using the default style.
It looks like styles have been replaced by templates. I haven't looked over the docs yet, but I was wondering if there was a quick way to get the "look and feel" of my previous version back.

The styles are not convertable, if you want to restore the style you'll need to make the changes manually. For reference perpouses your old forum.css file was backed up into errors/.backup/ directory so you can quickly port the changes from there to forum.css.tmpl

No, if you want to use the old icons simply overwrite the icons created by the upgrade script with the old ones.
