I have recently update my FUDforum to 2.8.1 version.
First what i noticed was no polish letters everywhere - in forums descriptions, in posts. I used "MySQL Character Set Adjuster" and "Compact Messages" to change to UTF-8 but that did nothing, only change length of strange signs.

The first step is to restore your forum from the backup you took before the upgrade. When done, please let me know so we can start investigating the problem.

Are you using pl_PL.UTF-8 as your theme's locale (as you should on Linux systems)?

If you select data from the DB, is the data also messed up?

I fixed most of problems, but data in column Last Messages and other places is craped.
Can you tell me where it's localized ? Database, files ? I can't find it.

You can use the "MySQL Charset Changer" to change your tables to UTF-8. No harm in running it again if you are unsure.

The message bodies are in files and can be converted with the "Compact Messages" control panel. This one is dangerous and converting twice will mess everything up. So, backup before you use it.

To set the locale, navigate to the "Theme Manager" control panel.
