I have a couple members on my site that I want excluded from Rank Manager display. Is this possible?

Based on number of posts? You can change the "Rank Name" to an empty value in the Rank Manager.

Actually I was hoping I could have about 10 users who simply do not show anything in their profile related to the Rank Manager, or I manually set their Rank to the highest level to being with.

You can always edit the drawmsg.tmpl template and add an {IF: ...}{ENDIF} around it.
